Enhancing the nutritional efficiency of complementary infant foods via adding sweet chestnut powder

The present study investigated the effect of Castanea sativa Mill (sweet chestnut powder, SCP) on the nutrition of weaning rats. 24 male albino rats weighing (45 ± 10 g) were used in this study. The rats were divided into two main groups: The first main group (6 rats) was fed a basal diet as a control group. The second main group (18 rats) received a modified diet supplemented with different ratios of Sweet Chestnut powder (SCP); they were divided into three subgroups (n=6) subgroups (1) fed on a diet containing 5% SCP; subgroups (2) fed on a diet containing 10% SCP; subgroups (3): fed on a diet containing 15% SCP. Rats were kept in well-aerated cages; diet and water were supplied ad- libitum. Chemical, physical and sensory evaluation for teething biscuits supplemented with SCP were also done. Results indicated that feeding weaning rats with diets containing different levels of SCP induced a significant increase in feed intake, body weight gain%, and feed efficiency ratio. On the other hand, without adverse effects on tested biological parameters and in some cases, with notable enhancements, especially in mineral content. Sensory evaluation results indicated that all teething biscuit samples produced with proportions of 5, 10, and 15% of SCP had an acceptance greater than 90%. In conclusion, the current study indicates that sweet chestnut powder is a valuable source of nutritive compounds with health benefits. SCP can be safely incorporated at levels up to 15% in infant complementary foods, that promote healthy growth.
